They have no &quot;off switch&quot; like people and other animals do.

Some fish will eat until they break apart.  Literally.

Mostly though, over eating causes chemical changes in the fish&#039;s body they can&#039;t recover from.  Ever heard of water poisoning?  It&#039;s when humans die of drinking too much water.  The excess water flushes out electrolytes the heart needs to beat.  It&#039;s the same concept with over fed fish.  Chemical irregularities prove fatal.

In this case, the fish start looking sick and just die.  The only outward signs are faded body coloration, bloated bellies, and maybe clamped fins.  Over fed fish will be still and look miserable.  Perhaps huddling in a corner or near the heater.
